Cucumber Melon Salad
Melon season is finally here! …and you thought it would never come.
I found this recipe in a magazine while I was waiting at the doctor’s office the other day. I can’t remember what magazine it was otherwise I’d give them credit. I did however test out the recipe last weekend at a backyard bash and it was a hit. The flavors all work really well together.
Since it’s technically a salsa it goes great served with grilled chicken or pork but you could also serve it as a side salad.
Recipe serves 6
2 cups diced orange-fleshed melon, such as cantaloupe (1/4 to 1/2 in. cubes)
1 cup diced cucumber (1/4 to1/2 in. cubes)
½ cup finely chopped red onion
1 serrano chile, stemmed, halved, and sliced
½ cup roughly chopped cilantro
3 tbsp. lime juice
1 tbsp. vegetable oil
1 tsp. kosher salt
Mix all ingredients together in a medium bowl.
Make ahead: Up to 1 day, covered and chilled.
